If you want to change the picture, go to the Accounts pane of System Preferences. If you click Login Options, you can also change the login screen so that it only shows a username and password box, instead of pictures.
It's also possible (using the command line) to hide a user entirely from the login screen, but then you'd find it kind of hard to login in !
