I Just got Panther installed on an old iMac 400Mhz (Kihei) with 60GB HDD and 768MB RAM. Panther works fine, but some of the apps that I frequently use runs only on Tiger. Will Tiger be faster than Panther on my system? What would you recommend?

It will not be faster - it will be about the same, but with more features (Spotlight in particular). Does use slightly more RAM, but 768 MB shoudl be enough.

My old mac has the same specs as yours. I have found the GUI with Tiger to be snappier than with Panther.

I too found Tiger noticeably faster and more polished-feeling on my iMac DV 400. 768MB RAM.
