Can I use the software update server without using Workgroup Manager or such? Basically all our users have local login accounts, but it'd be awesome if we could still use the Software Update server - I don't see an option for it anywhere, maybe its possible to do a sneaky hack somewhere?

Yes, this is doable. See p. 75 in the "System Imaging and Software Update Administration" document.

You may want to use Software Update Enabler if you want users to set this themselves (or just don't fancy heading off to the Terminal to make the changes).
