I brought my powerbook to the apple store and they re-installed the OS
from an external hard drive. Is this something I can do?

Yes, provided you have an Install CD/DVD to copy to a hard drive.

Assuming that you have OSX installed on the external....
System Preferences -> Startup Disk -> Click on the drive you want to boot from then click 'restart'.

I think this is possible with OS X server, but I'm not sure about a client.
I would highly recommend using a hard drive if you install OS X often at all. Here at work I partitioned a 60gb hd with a 4 gb partition. Then I put in the OS X DVD, and in Disk Utility I clicked the DVD in the left column and went File > New > Disk Image from [name of DVD]
I made sure it wasn't compressed and then made the image. After that was done I mounted the image and selected it in the left column, then went to the 'restore' tab. I chose the image as the source and my 4 gb partition as the destination. IIRC I might have had to rename the partition "OS X Install DVD' or whatever the stock DVD name is.
Now I can hook up the drive via firewire and if the computer's still on, Go System Preferences > Startup Disk and it should show up, or if the computer's off, I hold the 'option' key during startup and that boots to a screen that lets you select the boot device.

You can restore directly from the CD/DVD to a disk. There's no need to make the image first.

I dont understand how the apple store installed OS X from their external hard drive.
I want to do this instead of from CD because its faster. Do I need to create a image? how so?
Not knowing what I am doing, I did a complete installation to external hard drive but I cannot install to powerbook from that.

Two different animals. What you did was install the operating system on an external drive. What you want is to copy the installer. Look at Gossamer and Art, between them they have the correct technique.

Why do you want to do this? You've already wasted more time than you would have saved. If you are only reinstalling one machine, don't bother.
