I want to put an icon in my dock that will take me to my applications folder. I've tried dragging the icon from finder and it either makes a copy or deletes it from the finder menu. I feel like this should be easy to do. Am I missing something?..

Sounds like you are dragging Applications from the Finder side bar, and its 'poofing'. Instead, click on your hard drive icon, and drag Applications from the main Finder window to the right side of the dock (as folders, HD's can be placed only to the right of the divider)
