Is there anyway to put the applications folder in the dock? perhaps a shortcut to it? thx

Yes, drag the folder and drop it next to the wastebasket (on the right side of the dividing line).

but it gets removed from my sidebar... no?

Don't drag from the sidebar. Drag the actual folder from a Finder window. It's not entirely obvious at first, but the sidebar acts more like a list of shortcuts than actual folders that you can drag around and interact with.
