What is the best process for backing up all my user data, that will allow for easy replacment if I have to do a clean install of OS X?

You would back up the Users folder on the root of the drive. You could back up each user's home folder individually, but then you would miss items the Shared folder. There are a number of backup utilities available for the Mac.

Download de ja vu. Then backup your home drive through their onto an external hard drive.

If you only want to copy the user homes (you'll miss all settings saved in /Library though):
sudo ditto -rsrcFork /Users /Volumes/MyBackupDisk/

To backup your entire partition:
/Applications/Utilities/DiskUtility > Restore

I'm just mainly needing to backup my documents, since I have had my computer for about two months. Everything else can be reinstalled and settings changed back.
