If I change my startup disk to a Mac OS X 10.4.4 install disc would my files on the previous startup disk be deleted?

No. The only way they would be deleted is if you did it yourself by using Disk Utility or choosing an erase and install.

But do be aware that if you make that change, the next time you try to start up without the install disc the computer will not automatically go back to your hard drive. A better method is to put the disc in the drive and then restart while holding the C key.
