Is there a way to copy more than one thing onto the clipboard for subsequent pasting?

There's quite a number of alternatives, many free. Personally I use the free Butler ( http://www.manytricks.com/butler/), so when I press command-alt-v I get a menu of the last ten items I have copied, and can choose one of them. Works very simply and nicely. It does about a million other things too.

Aron - thanks for posting the iclip link. Looks great and easy too!
monkeybrain - I have heard great things about Butler. I downloaded it. But I really don't understand how to use it. Does it work in the background? Or do I have to specifically open it to use it. If I want to copy something from say Entourage and paste it in an email, how would Butler help me?

iClip is brilliant. I have it set to the left side of my screen, hidden, circular bins, and command-option-space bar to bring it up. iClip is so efficient it can store several full length movies, songs or clips from them copied to the clipboard from Quicktime and you can play them back in iClip before pasting them anywhere else.

Yes it works in the background. What you should do is set Butler to run at login, and then you need to set-up the pasteboards feature. See my picture here:
All you do is click the plus button at the bottom and then choose smart item > recent pasteboard menu. You will see the window is divided into different categories, these are to position the menu somewhere on the menubar. You can see that I have mine in the hidden category, so it only shows up when I press my shortcut (command-option-v). To use it, you just copy as normal, but when you paste you use the menu to choose which item of the last several you want.
You can play around with all the other options in there too. I don't have anything showing on my menubar, but it's possible to put all sorts of menu up there if you like. I also use Butler to launch apps with keystrokes (option-d), or using its spotlight-style menu. iTunes controls are easy to set up too.
