In Windows you can hold down the SHIFT key to delete files permanently - skipping the recycle bin ... is there something similar in OS X ?

Not that I can think of, other than command line via Terminal.

I thought I'd seen some Automator action before that does that. Seems like you can add a Secure delete action to the Finder (executed by doing a right-mouse click). I used to have it installed on my computer, but not sure what happened to it ...? (Maybe disappeared with one of the upgrades).

If the file (or folder) is highlighted in Finder, command + delete puts it in the trash, then command + shift + delete empties the trash. That is not Secure Delete, which AFAIK has no keyboard shortcut (although I am still on 10.3.9).

Secure Delete is Shift+Option+Command+Delete

or, if you wanted, you can download a program called Graveyard here: 1802: Graveyard
You can either put it in the dock or put it in your finder toolbar or anywhere you like and drag files to it to delete them permanently
