Can I keep the Download & Documents folders "as is" in the new dock?

I was wondering if I am missing something easy:
I want the Download & Document folders in the dock to look as they did at install, and NOT give me the first item in the folder as a preview... There doesn't seem to be a setting to turn off this "feature"...

Angeringly, no, you have to put up with ugly messy "stack" icons on your desktop.

And all this so we don't have to have "cluttered desktops"! Except that now we do to regain what little of the previous functionality we can  .

To me about the only thing good about stacks is the grid view.
But then you have to deal with the un-navigable folders and the fugly icons stacking in the dock. Man we need options with these stacks.

In their current form, there is really nothing good about stacks, unless you like making little groups of 5 or so icons each.
