Is there a way to do screen sharing but keep the remote screen black or locked? I want to do some stuff on my work computer, but I don't really want the screen being active.

You need to upgrade to Apple Remote Desktop to do that.
8 Core 2.8 ghz Mac Pro/GF8800/2 23" Cinema Displays, 3.06 ghz Macbook Pro

So, it's apparently possible with a little plist editing:
macosxhints.com - 10.5: Add useful toolbar buttons to Screen Sharing
