Having had some problems with iChat which were solved my re-installing Leopard I was told during the second installation that the first configuration was being stored in a "Previous System Folder'.

Can this be deleted and, if so, where is it?

When ever you are forced to re-install OS X a folder is made at the root level of your hard drive called "Previous Systems". That folder should have all of Apple's applications and utilities, but none of your User settings. Once you have run your new installation and nothing is missing, you can safely throw that folder out.
