For some reason, I continue to connect to my neighbors unsecured wireless network initially instead of my own. How can I either set a preference for my own and/or remove his network from my list?
I like my water with hops, malt, hops, yeast, and hops.

You can edit that under Airport in the Network prefpane of System Preferences.
