I am preparing to get my first OS X Mac soon rather than deal with Vista. My question is a simple one, but the answer will be important to me. Can I use a USB flash drive to transfer files back and forth between a Mac at home and a PC at work?

Absolutely. Most flash drives come formatted as FAT32 volumes, which are compatible with both OS X and both XP and Vista.

Yes, no problem.
Just make sure you got the right apps on your Mac.
If you want to edit Word Documents or Excel sheets, you would need software that could do that.
You can get M$ Office for Mac, or use Apple's iWork.

Also, if the USB stick is new, make sure you format it first to avoid possible corruption in the future, especially if you're going between Windows and Mac OS X.

One word of warning - OS X creates 'dot' files* that are hidden to users of OS X, but when you view the drive in Windows they are visible. You can safely ignore them.
* e.g. .DS_store
