Is there a Linux disc or something that can allow me to run TRIM on my drive? I've been really hard on it since I got my SSD and would just like the peace of mind that it's been refreshed.

You could back it up, boot into another OS, secure erase it, reinstall OS X, and restore your backup. The other option is to wait for TRIM support to show up in the OS. It seems that Apple's working on it, since some hints of it have shown up — notably, 10.6.4 added a "TRIM Support:" status line to System Profiler. Currently it always says "No", but perhaps that will change in 10.6.5 or 10.6.6.

Is there anyway I can hook it up to a Windows 7 box, and just tell 7 to format it and run TRIM on it? or would it be then "un-TRIM'd after I reformat it back to HFS+?

Yes, that would work. I wouldn't bother until you start noticing a slowdown in your writes, though.
