I used to have iChat pinned so that it would show up on every space, but I want to get rid of this behavior in Lion. Unfortunately, I don't see where to do this in the Mission Control prefs.

You do it from its icon in the Dock.

It used to be in the Spaces pref pane, which was actually waaaayyyyy easier to manage then having to do it per-app from the dock.
