Importing Users to Non-Standard Folders?

So I know you can edit a user, and change the location of their home folder, putting it on another drive if you want to. This is what I've done, so my boot drive is an SSD and my user folder drive is an HDD.

But is there a way to do this from the start? I'll be setting up a new mac mini soon. It will have a 60 GB SSD and a 750 GB HDD. The old computer had it's contents entirely on a single HDD. So I'll be doing a clean install of OS X, and making a quick 'Admin' user. But once I do this, is there a way I can use Migration Assistant to import the user from the old HDD, to a 'custom' location on the new OS? By default, it's going to want to put it in /Users, but that disk is a small SSD. And we're talking about several hundred GB of data. Is there a way to import users right to /Volumes/HDD/Users ??

I would just create the users on the HDD, then overwrite their user folders afterwards. The old and new versions of the users should probably have the same passwords.
