I use to be able to do this in Leopard, but Snow Leopard did not allow this, and apparently Lion does not either.

I would like to be able to select a group of icons and get info about all of them at once. I would like the info to show up as one large item rather than several individual documents.

My ultimate goal is to hide all file extensions, so it would be nice to click "hide extensions" once rather than 50 times

Are you talking about Command-Option-I? If so, it works for me.

That's what I was looking for. TYVM!!! I was just doing command I, and was getting several panels opened at once.
