How do you upgrade Java on 10.5.9?

If Apple is building Java for Macs, and they're they only have a patch for 10.6 & 10.7, what do you do if you're on 10.5 or lower? I tried installing the 10.6 java update but it gives me a message saying it's only for version 10.6.

Either you disable Java or you upgrade to SL. Sorry, but Apple does not support software two versions old. This is not a good policy on their part, but it is what it is. This is also likely part of the reason Apple will stop shipping Java for Mac - they don't want to keep making security updates for it.

Haven't they already stopped bundling Java with Lion, or was that just pre-announced a while ago without being implemented?

They have stopped bundling it, but the only release for Macs is still the one from Apple, which will auto-download as soon as you try to start a Java app. There is a project run by Oracle with some support from Apple that will bring Java SE 7 to Lion, but it does not seem to be done yet, and Oracle did not take over responsibility for patch the Mac version of Java 6.

10.5.x and prior are totally insecure.
They have dozens of unpatched vulnerabilities.

Yes, that's one way to mitigate issues. As I analyzed a while back, 10.5 is not so terribly insecure yet, but you have to disable Java.
In other news, Oracle has now started delivering Java SE7, but only for Lion.
