So you're talking about categories/folders in Mail?

The folders you see for an account you access with Mail are established in that account. If you have a Gmail account and an account from work (IMAP or POP account), for example, you need to go to the Gmail account with your browser and configure it for different/more/fewer folders or headings (and Gmail can be a challenge to do this with because they use a different naming scheme and it isn't particularly straightforward and obvious). Configuring your other account(s) depends on how that account is set up and what sort of server system it is using.
I use Mail for some accounts (including a Gmail account), and Entourage for others. I have to say that I find this sort of task much easier with Entourage, and I do not think it has much to do with my experience with Windows at work...

I think Greg is wanting to consolidate his mail folders so that he has one of each of the special mailboxes needed for the clients he uses, where the special mailboxes are Sent, Drafts, Junk, and Trash?
These so-called special mailboxes are not actually special though, they are just regular folders that your mail client has decided to use for these purposes. You can often change what folders your client uses for these purposes. The instructions for doing so will depend on what client(s) you are using though, which you'll need to provide us with if you wish step-by-step instructions (or wish to find these yourself on the Google)
