I plan on making the SSD my startup drive. Can I continue to use my applications residing on the old startup drive or do I need to move them over to the new startup drive?

It's a Mac. Applications can be wherever you want them.

Sounds good. I'm guessing I'll be able to direct the path to iTunes and iPhoto libraries? How about the preferences for 3rd party apps? Will it just work because it's a Mac or will I have move them over to the startup disk?

All that stuff is stored in your home folder, not with the application. The physical location of the application is unimportant.

It'll just work, because it's a Mac. The one thing is that with the default apps that come with OS X, you probably want to leave them in their default locations, because Software Update has a somewhat flimsy track record of updating apps that have moved. Third-party apps, though, can go anywhere.
