Which version of OSX is best for me?

I've got an old Mac Pro (Early 2008, 2x2.8). I want to turn it into a dedicated server that will store data that will be accessed from a Mac mini and a MacBook Air (both running ML). My current router is an Airport Extreme.
The Mac Pro will have four (4) hard drives installed: a startup, a time machine, a storage, and a backup for the storage. It will also have two (2) RAID boxes connected via eSATA.
What version of OS X would be ideal for this setup? Snow Leopard? Snow Leopard Server? Something else?

What versions are the clients?
I can't connect from SL client to shares on our ML server.

In theory, any version you want to put on there should be fine.

Thanks... I want to know what's best (i.e. runs smoothest on my hardware, most stable, easiest to set up file sharing, most widely accessible with fewest known issues, etc.).
