Which ports would I need to open on a linksys box to enable me to share multiple OSX machines? Has anyone done this? If so, can you please let me know?

Just set it up for DHCP, and your machines too (in NETWORK) and start plugging those puppies in! Make sure AppleTalk is on, and share away! You don't have to configure "ports" in the Linksys set-up dialogue. If you're on BB (ADSL or CABLE) usually you just set up the Router for DHCP (via the WAN link from your modem) and set your LAN for DHCP also... just like I said. Write more if there is a problem.

Can I share multiple OSX machines outside the linksys? In other words, can someone access more that one of my machines outside my linksys network?

Everything behind the Linksys router is hidden from the outside world until and unless you choose to make it visible. You can do this in a number of ways if you want to, or leave all your machines protected and hidden if you don't.
