removing
/System/Library/Extensions/IOFireWireIP.kext
should get rid of basic support.. i don't know if it's any more complicated than that.

But should I uninstall it? Since I didn't notice any unstable situation yet. But I no longer need this IP Over Firewire support...

If you don't need it you could simply uncheck it in the network prefs to deactivate it.
