I would like to get my PB running OS X.3 and Entourage v.X to see and pull email down from my district's Exchange server when at school. How do I set up the LDAP server? What does it look like? My Exchange server name is POSTOFFICE1. What would the LDAP server name look/sound like? Will this even work?

Use that link to help get an idea how to set it up. Just follow along (it may not be step by step correct but the general idea is there). Make sure you know the server address and all the other info you will need to get connected. Hope that helps.
