If I were to buy a second Airport Express, what could I actually do with it? Could I stream the same music to both of them from one instance of iTunes? Could I stream two different streams to the two AEs from one instance of iTunes. How about from two running instances of iTunes? Can I even run two at the same time?

Simple answer: no.

iTunes is made so that only one copy can run at a time on a computer, and you can only connect to one output device at a time (there would be synchronization issues otherwise).

You can use a second 'Express to extend your wireless coverage.

What a bummer. I was envisioning the dropdown box for AE selection actually being useful. Well, I suppose it is, as long as you only want to listen to music in one room at a time.
