I'll cut to the chase:

2 Macs, 2 users, 1 e-mail address. Both users want to be able to read the mail coming in and to respond. Leaving the mail on the POP server should make it possible for both of them to read the same incoming messages, but obviously neither will be able to see the other's replies. My assumption is that for both of them to get what they really want (full send/receive sync) they'll need a M$ Exchange server? I would prefer they had 2 individual e-mail addresses but that isn't possible right now for various reasons.

Any help would be appreciated.

The answer is to get an IMAP account. There is no other workable answer.

I have exactly that setup for my parents.

Here is some cheap and good IMAP mail service: http://www.fastmail.fm/
