I have what I guess is a "standard" airport extreme card installed in my G5. When I get rid of the G5, if I keep the airport card, will it fit in a new Mac Pro if the Mac Pro is purchased without airport or bluetooth?

No. The Mac Pro uses a new and different card for wifi/BT.
