I currently have an Airport Express (g) connected to my cable modem. I can't move it (for reasons like AirTunes etc), but I need to connect a new AirPort Extreme (n) to the existing 11g network to share a printer/disk etc.

The new AirPort utility is impossible to fathom. Is it easy enough to do/be guided through?

The easiest is probably to connect your new AP Extreme to the cable modem and then connect the AP Express to one of the AP Extreme's LAN ports ("roaming network"). There's a nice explanation on how this can be done (even how to enable a g and n network branch to allow both types of devices to connect at their max speed) in this guide (see p.39).
