I have an old iMac G4 with no airport card that I want to move into a room with no network access. If I pug in my old airport hub in that room and plug the iMac directly into it, will it piggyback onto my network?

Assuming all your wireless access points support Wireless Distribution System (WDS), which the Airport Base Stations do, you can have them piggy back. Apple has a guide on how to do this.
