Will apple ever get round to making an Express for video? For me would be v useful, from laptop to telly etc without having to get cables etc out...... any ideas?

AppleTV.
It couldn't just fit in a small Airport Express box, since much more processing power is required.

OK apple tv, but what about a wireless output to screen to use as second monitor for macbook. Apple tv good for using in frontrow etc and tunes stuff, but what about something simple just using as second display, or does apple tv do that too? Does digital video signal vary that much from digital audio signals?

Or get a cheap used iMac or mini and use VLC VNC to forward another computer's display.

VLC ? Do you mean VNC ?
And wouldn't that give you reduced fps ?

Definitely. I wouldn't use it to play games or stream movies. But since the OP wrote

For browsing, viewing e-mail, etc. VNC over n wireless or Ethernet will be fine.
For streaming movies any old Mac with n wireless (can be added to older Macs with USB) or 100 Mbps Ethernet would do fine. VLC and AFP are up to the task. Especially if you set the cache to a sufficient size.
