Any suggestion on how to change it. I've tried playing with the package contents without success

So you tried replacing AppIcon.icns ( use Capital letters where needed ) ? Sometimes you have to log out and log back in to see the changes, or drag the icon out of the dock and drag the new icon back in ( at least in Jaguar )...

No, I didn't think of replacing the file. I had just tried the sometimes true method of cut n paste. Upon your suggestion though, I did replace that file with the icon file of my choosing after changing the name. That didn't work either, but I was then able to change that file's icon through the cut n paste method.

It should be this difficult.

Why do you say that? It took me a week to replace my icon, and I just wanted to shift the color a little. Nearly drove me nutso. Replacing and copying and pasting ten times just for one stinking icon???

I love the U.S., but we need some time apart.
