I use candybar and changed it but when I click on the X-Chat window to use it, the icon changes back to the ugly original X-chat icon. I was wondering how do I get pass this?

Try dragging the X-Chat application onto Candybars "App Extras" tab (the drop well thingy) and scan the icons contained within the program for the offending dock icon.

It may well be that you are going to have to open up the app by selecting "Show Package Contents" then browse to the Resource folder and change the .icns file for the app. I don't know what it's called but maybe it's called the name of the app + .icns at the end. You will have to use Pixadex to export a new icns icon. I use Pixadex anyways.
