Is there a way I could enlarge these icons, and possibly get rid of the text?

I've looked at other menu applications but haven't seen one yet that would do this.

You can't get rid of the text totally but you could try FruitMenu to customize menus.

Somewhere in OS X these icon sizes are defined, there must be a way to enlarge them.

Honestly, i don't think its possible... well, without being an apple code-monkey dude anyway.

It's hard to believe there is no one here that knows where the sizes of icons in OS X is defined.
