I am in the process of setting up a lab in a K-12 environent and...

I need to know if its possible to disable (remove) menu bar items. Namely, I would like to delete the Go menu entirely and also the Finder Preferences.

If so, how do I do it?

I also need to know if its possible to disable or remove some of the standard keyboard shortcuts on a per user basis.

hrm... along with this kind of functionality... One could also program in a menubar show / hider... +1

You are better off using Preferences > Accounts and creating accounts with a Simple Finder. These can't install software, change preferences and can only run applications the admin user has put in the dock.

You can Command-Drag some things off of the menu bar like Airport, some third-party apps, the clock, etc. Other third-party apps that reside in the menu bar (that start up at login) require you to go to System Preferences > Accounts > choose the Kids' Guest account > Login Items then check the box that says "Hide" next to the items that reside in the menubar. They should then be invisible whenever that account logs in.

[Edit] Oh crap. I should have read the entire post. Anyways, I think you could also use FruitMenu, a haxie by Unsanity.
