Wise words, a diplomatic feint before an attack, or is this some sort of ploy to delay his inevitable ouster?

Doesn't matter.
Any new leader will share his beliefs because the hardline Israeli viewpoint is necessary in the messed up world of Islamic fascists. Only when Israel exercises its divine right to obliterate the apostate Iranian nuclear program will the region regain its balance.

I wonder what Sunnis would think of this. I mean, Sunnis dread a nuclear Iran even more than the West.

I think this is partially dependent on which of the above things are motivating Olmert. I would guess it's probably a mixture of the three.
If the Israelis can agree on one thing it's that they will not tolerate a nuclear Iran, but there are obviously widely differing opinions on how not to tolerate it.
Pat Buchannan (who whatever you think of his politics tends to give really good analysis) seems to think the Israelis are pressuring the US to do something about it, and Olmert wants to keep the (American) press from screwing the pooch by making the public all jittery.

Pat Buchanan refers to the US Congress as "israeli occupied territory."
So let's take his analysis with some skepticism.
