Honestly I would stick with the 5400rpm one. Nowadays 5400 rpm laptop drives are just as fast as 7200rpm under normal usage. Plus 7200rpm will have greater vibration on the laptop than 7200rpm ones.

If I were you I would go with Debian 4.0 PPC for your G3. Use the net-install cd and install base, desktop, and laptop packages in the installer. Debian offers better support for PPC than Ubuntu.
