Apple have changed some naming since the WWDC, you don't have to put the .arpa anymore, now it's only hostname.local, for the linksys the RendezVous thing is not release yet to customer.

The PAL setting in the ffmpegx is only for the Output (aspect ratio). For the lipsync problemes you should use the same FPS as the source, so it can be 25fps or 23.97fps if it come from a film...
