Just go to ubuntu.com, download the Ubuntu Desktop image for either release 10 or 11, then start Parallels 7, select "File --> New", and select the image file you just downloaded. I'll create itself...

I do this pretty regularly (about 18-24 months between upgrades). I ALWAYS buy AppleCare and that seems to make a big difference in how easy it is to sell.

Oh, and be aware that it may not be a true matte option....
