I'm looking foward into buying a new, faster HDD, will I be able after installing Mac OS X to just drag and drop my apps in the old HDD into the new one without loosing anything ?

If you were to drag all of your system files and library files as well (or keep the HDD with all your stuff on it now as your start-up disk) then yes.

Actually just copying the files doesn't always work (it didn't for me anyway).

This program called Carbon Copy worked well though:
