did apple ever create any appearance themes other than platinum?

I don't know if Apple created any of these, but I had fun trying them out...some of them may cause problems with some systems, but nothing that removing them will not cure. They're at: http://www.macthings.net/themes/

Apple created the "Gizmo" and "Hi Tech" themes, but axed them before releasing 8.5. I think "Drawing Board" was created by Apple Japan, or something. None of these can be downloaded, though, since Apple got everyone to remove them from their websites.

It is true that Apple harshly pursued everyone who tried to use the theme files they created, putting a damper on their "Think Different" philosophy. However, it is rumored that new Apple themes may be included with Mac OS 9.1.
