... I plug in my full iPod into an empty iTunes for the first time?
I'm getting a new computer and don't want it to automatically delete anything. Will it? I don't think it will but I want to be sure.

It won't do anything automatically. It will notify you that it is linked to another computer and will ask you if you want to change the link to the new one. If you answer yes, then it will wipe the iPod clean.
