Will an XServe do for me ?

Hello there,

Just a little question about a XServe based network.
It's possible that I will become the admin of a small network in the near future. But the first thing I wanted to do is replace the existing server stuff with an XServe.
The question is: would a single CPU XServe be good enough to serve mail, be a print server and accept remote connections through VPN(?) ?? It wil also act as a router for normal internet connections. I won't be serving website on it. Would a single proc XServe do ? Or would I need to go Dual ?
And also the network is about 100% Windows. Win2k I think (I'll upgrade them to Win2K anyway is they are not). And 2 or 3 Macs in the network. There are about 30 Win PCs. Wel 25 on site and another 5 or 6 on other locations. Also administration from abroad is possible right ?
I'm looking into an XServe or an IBM eServer but I wan't OSX Server since I'm not that savvy (yet) and I want to avoid Windows at all cost. And Linux is a bit complicated.
