I'm resurrecting an old Power Mac 6100/60 AV, my first Mac in fact, for mostly word processing in a small office.
I have Mac OS 9 installed on it, but I plan to wipe the drive and re-install the OS. I've been wondering whether I should re-install 9 or dig up one of the previous system versions instead. It has a small hard drive (less than 300 MB), and Mac OS 9 doesn't leave it much space for other files, though they'll only be AppleWorks WP files.
Any suggestions?

if you can find 8.1 or 8.6, they should be smaller than OS 9.

I disliked the 6100 for 4 long years. The 7.x versions are to primitive the 9 to big so some of the 8 would be least bad

8.1 -- the oldest Mac OS that can read HFS+ volumes.

I would suggest 8.1. You don't need hfs+ support on a disk that small so format it hfs.
Then go through and disable all the extensions you don't use. After its all good and running smooth delete them.
