PowerMac G4 Gigabit 1.2GHz, 896MB, 2x 80GB WD SE, Pioneer 107, Radeon 9000 Pro 128MB

That would depend on price points and other specs. But if the lower-end dual-processor Power Macs are competitive to it, then I would not choose a SP 2.5.

So if a SP 2.5 were the same price as a DP 1.8, the DP is a better option?

I'd take a dual 1.8 over a single 2.5, all else being equal.

I would take a dual 1.8 over a single 2.5 at the same price.

However, I would consider a single 2.5 at the right price. Can't think of what that would be right off hand, but I wouldn't buy any G5 that was neutered (only 4 RAM slots, no PCI-X, etc.) Only because of expansion would I go with a dual 2.0 at the current time.

However, I don't think I'll buy any G5 tower until it matches the expandability of my MDD tower. Nothing even compares, and I don't know if Apple will ever make a machine as wonderful to run or work on as the MDD tower.

No frickin' way. Mac OS X shines with two processors.

The only time I'd buy a single processor is for an iMac or laptop. I don't even think they should be allowed to MAKE single processor Power Macs. Abominations!

(Recently upgraded from dual 1.25 G4 to dual 2.5 G5. Lovin' the metal!)

Without a doubt. Heck, Mac OS X would probably run better on a dual 1.6GHz G5 than on a single 3.0GHz one, if either of those existed.

Dual processors do a lot for overall system responsiveness. Some applications that are not written to work well on dual-processor machines might prefer raw clock speed, but overall, I'd choose the DP machine in a heartbeat.

I concur that single CPU's are really only appropriate in the laptops and consumer models.

The only way you're ever going to see a single G5 2.5 is when the Gx has matured enough that the 2.5 is the bottom of the barrel speed wise in the PM lineup. Don't hold your breath until that happens.
