Pages IMHO (its a part of iWork). Neo Office is good if you want something opensource.

Before the release of iWork '08, I would have said Melell, but, now that we have a new version of Pages, it takes the cake, hands down.

LaTeX with XeTeX outputs the most beautiful documents, imho. but its really a typesetter and not a word processor...so id have to say,


MS Word.

You should also give a look to Nisus Writer Pro, the user interface is quite nice.
For me, the `best' word processor is still LaTeX, but its main focus is on scientific publications and books.
I don't suffer from insanity, I enjoy every minute of it.

The new Pages is great, and for $79 you also get Keynote (a spectacular app) and Numbers (young, but fairly useful and very intuitive).
