OS X is multi-threaded, yes. Multi-threading in OS X, however, is a joke according to many people.

First of all, OS X supports multithreading and systems with several cores from the very beginning.
None of the commercially available Intel Macs has hyperthreading (aka simultaneous multithreading, etc.) which is entirely different from having several cores: the cpu pretends to consist of several cpus so that available resources can be utilized more efficiently by several threads. Intel's deprecated Netburst (Pentium 4) architecture had this (and thus the developer Intel Mac), but the current Core architecture-based Intel cpus do not. The successors to the current generation of Core cpus supposedly include hyperthreading again, so we cannot really say whether Apple will decide to include support for this feature or not. My guesstimate is that it will. But as of now, it's simply not relevant for Mac users.
Regarding smp performance, FreeBSD has made a lot of progress in this area lately, so I guess some of that will trickle down to OS X eventually.
