How do you change the Apple Icon on..

the menu bar. I was wondering if you can change the color from it's rainbow to a solid color.

The iMacolor control panel lets you do this. You should be able to download it from versiontracker.com.
Or you can just wait for Mac OS 10.0 on March 24.

Or you can go to www.kaleidoscope.net and pick out a scheme that has the solid color logo. My favourite scheme is Cecil III. No other scheme compares to the attention to detail that this one has.
Go have a look, I am sure you will find something that you will like.
