I'd like to use VLC to view podcasts from iTunes. Is there a way to make this the default app for viewing iTunes videos?

You can use VLC to use iTunes-podcasts, but you can't have it automatically opened in VLC when you double click the podcast in the iTunes window. You need to select the podcast in iTunes, select the File->Show original command (or press ⌘R) then drag the file onto VLC in the Dock or use the Open with... command in the Finder context menu.
